a busy day off

i fell into bed at ten last night. exhausted to the core even though i'd had the day off. it was one of those nights when you feel sleepy even in the tips of your toes. where flannel pajamas and a freshly laundered pillowcase feel like heaven and your mind drifts to dreaming in the middle of praying.


i had yesterday off, and woke with a mission. robert had to go into work, and as i stretched there in bed that morning, the sun just creeping up and the house still dark with sleep, i felt for him, leaving in the freezing dawn, scraping off his car, going out like it was any other monday. meanwhile, i slept in with pablo. waking every 45 minutes or so, only to look at the clock, adjust my heating pad, and  turn over on my other side, tucking my legs beneath me. 


it was one of those slumbers where even though i woke up a few times, i continued the same odd, whimsical dream sequence. 


so to make it up to robert, i vowed to do something for him, just for him, on my day off.


and in my family, one of the chief ways we show love is through food.


so i did it. i went to two different grocery stores to get all the items i needed. i scanned the internet for recipes and coupons. i started cooking at four and we ate at six.


here's what our night looked like:


thai chicken wraps with spicy peanut sauce, recipe here . 
**note: for the salad, i skipped the sprouts, scallions, basil, mint, etc. because it was getting to be a bit expensive, plus i couldn't find sprouts or mint. so, i opted for one bag of broccoli slaw. it was perfect.

thai sticky rice with mango and coconut milk  for dessert, recipe here

we devoured it, then collapsed on the couch to watch the bachelor. {emily has stolen my heart.}

i cooked, cleaned and did laundry on my day off.

but as i turned off the lights, dragging my sleepy body under a heavy blanket, i snuggled next to the man who made it all

totally, completely.

worth it.

PS...I find nothing more satisfying than preparing special meals for my family. They appreciate it, and it makes my heart smile. :o)

Your food looks delicious! What a lucky guy he is. I love productive days off.

I'll have to catch The Bachelor on Hulu tonight, and I agree, Emily is a doll. And how crazy is the lady from SLC?! We are always represented by weirdos. : )

It was a regular Monday for us yesterday, work work work - although a day off would have been quite nice (since I have a 6 day work week), but work it was for both of us. Robert was very lucky to have you make him such delicious looking food! Im sure he was very thankful!

That looks amazing! I love that you made it out of love and appreciation for your husband. Today is my hubbys first day of school- I just might head off to the store and get him alittle treat because of your example! That is what marriage is all about!

That food looks so amazing - what a good wife you are to spoil him at dinner time! My husband had to work yesterday too but I was too sick to do anything nice for him so we had frozen pizza with artichokes for dinner. Hopefully I can get up this afternoon to make some lemon curd that I've been craving (after seeing Laken's version on Farmhouse). But we're going out tonight for fondue so even if I don't get around to it, we'll still be spoiled for dinner!

I was just commenting on someone else's blog this morning about how so many of you lovely blog-friends are amazing cooks in the kitchen---your husbands are so lucky! Unfortunately, I am not as creative and my poor husband can probably count on both hands how many different meals I can make. One of my goals for 2011 is to try at least one new recipe a month. I haven't accomplished this for January yet, but I might just have to snag the recipe for the Thai chiken wraps - they sound so yummy!

i love the bachelor except i always have to watch it on hulu cause i have an evening class monday nights. your dinner looks scrumptious! and mango is my fave.
